It looks dull because nothing was added to make it shine.
Most dal is polished after hulling so every grain turns the same glossy colour.
We clean, grade and pack it, and stop there. You will see a matte surface and some paler grains.
A little longer to cook. A short soak closes the gap.
The outer layer that polishing wears down is still on the grain, so water takes longer to get in.
